Deviled Eggs

Ingredients

2 cups all purpose flour
2 tsp ground cinnamon
1/4 tsp salt
1 tsp baking soda
2 tsp baking powder
1-cup canola oil
4 eggs
1 2/3 cup sugar
1 can pumpkin pie filling

FROSTING
2 cups confectioners' sugar
½ cup butter
3-ounce cream cheese
1 tsp vanilla extract

Method

•    Mix 2 cups all-purpose flour, 2 tsp baking powder, 2 tsp ground cinnamon, 1 tsp baking soda and ¼ tsp salt in a large mixing bowl and keep aside.
•    In a separate mixing bowl, mix pumpkin, sugar, oil and eggs and beat this mixture at a low speed until combined.
•    Now beat in the flour mixture until just combined.
•    Pour this mixture in 15 by 10 greased pan.
•    Now bake this batter for 25-30 minutes in a preheated pan at 350 F or until the toothpick inserted at the center of the cake comes out clean.
•    Now cool it completely for about 45 minutes.

FROSTING
•    Mix the butter, cream cheese and vanilla in a large mixing bowl and beat it at medium speed with help of a mixer.
•    Now beat in sugar until smooth.
•    Spread this mixture over the cake and cut the cake into pieces.
•    Now for the final touch, garnish the cinnamon pieces on the cake.

Egg Balls


Ingredients
Hard Boiled Egg : 4
Egg: 1
Bread Crumbs: 100g
Garlic : 4 cloves (creamed)
2 green chilies (finely chopped)
Salt: 1 teaspoon
 
Preparation
In a bowl mix together the 1 beaten egg and bread crumbs, garlic, green chilies, salt.  Divide in to four equal parts.  With oiled hands, shape each mince portion in to a 5 inch round flat cake.  Place a hard boiled egg in the centre and mould the mix evenly around the egg making sure no thin areas.  Keep covered to prevent the surface drying.

Heat oil in a pan and fry till they are brown.

Tips
Add salt when boiling the egg.

Stuffed Egg

Ingredients:
4 eggs (hard boiled)
1 tbsp ghee
1 tbsp chopped onions
3 tbsp cooked ground/minced meat
Salt To Taste
1 green chili (chopped)
1/2 tsp ginger (grated)
1 tbsp tomato paste
1 tbsp corn flour/corn starch
1 egg (beaten)
1 tbsp coriander leaves (chopped)
1 lemon juice
Breadcrumbs for coating
12 pieces of liver (fried) for garnishing
Oil for deep-frying 

Preparation:
•    Heat the ghee in a frying pan and fry the onions till golden.
•    Add the meat, salt, chili, coriander, ginger, tomato paste and lemon juice and fry for about 5 minutes.
•    Peel the shell and cut the hard boiled eggs into half length ways.
•    Take out the yolks and add to the frying mixture.
•    Cook for another 5 minutes and remove from the heat and allow to cool.
•    Stir the corn flour into the beaten egg, making a batter.
•    Place the breadcrumbs on a flat dish.
•    Fill the meat mixture into the yolk cavity (hole from where yolk is separated) of each egg half, cover with another half to make complete egg shapes.
•    Dip the stuffed egg into the egg and corn flour batter and roll over the breadcrumbs.
•    Heat oil in a deep-frying pan over a moderate heat and fry the stuffed eggs until golden all over.
•    Remove and drain on a paper towel.
•    Serve garnished with fried liver, coriander leaves and with chutney or sauce in plate.

Egg Bhurji

Description
This is an India recipe. It is a complete meal by itself and makes a good serve with chapatis (Indian Bread) and bread.
Ingredients

Eggs - 4
Onion - 1 (medium chopped)
Garlic - 2-3 pods (crushed)
Green Chillies - 3 (minced)
Tomatoes - 3 (minced/pureed)
Turmeric Powder - 1/2 tsp
Oil - 2 tbsp
Salt & Pepper to taste
Coriander leaves (minced) for garnishing
 
Preparation
Beat eggs well with a few spoons of milk.
Cut the onions,chillies ,tomatoes and keep aside.
Heat oil and add the onions, garlic and chillies.
Fry till the onion is transparent.
Then add tomatoes and the turmeric power.
Fry till oil separates from the mix add pepper and fry.
Add the eggs and mix well.
Add the salt and mix till the eggs are set/semi set-according to taste.
Garnish with the chopped coriander and mix.
Dish is ready and serve in plate.
